This Lazy Cabbage Roll Soup is whole family’s favorite. Flavorful, nutrition-dense soup that you can also cook in Instant Pot/Pressure Cooker! I love my pressure cooker, own two as I use it several times daily. Such a helper for working moms like me. Come home, throw things in the pot, close the lid to walk away – is the best part about those electric pressure cookers.
Serve with homemade sauerkraut, and GAPS sour cream makes the soup even yummier. For those who aren’t on GAPS diet, you can add cooked brown rice with the soup.
1 large onion, diced
5 cloves garlic, minced
1 lb ground pork (use more if you like meat!)
1/2 medium cabbage, cored, diced
5 roman tomato
5 tbsp tomato paste
5 cups beef broth
1 tbsp garlic powder
1 tbsp onion powder
1 tsp oregano (use more if you wish)
1 tsp thyme
1 bay leaf
2 tbsp sea salt (taste when cooking is done, then add more salt for your preferences)
a pinch of pepper
1 tbsp coconut oil/your preferred GAPS oil
- Saute for 5 min in the pressure cooker to brown onions and garlic with coconut oil.
- Add in the ground pork. Once browned, the rest of the ingredients.
Stir together to mix well, put the lid on and seal the valve.
- Manual cook for 20 minutes, then Natural Release as liquid is red/tomato. However, you can do cook for 25 minutes, then Quick Release. (Just cover the valve with kitchen towel to avoid red-splash mess!)
